Pork Souvlaki Skewers with Tzatziki

Our Greek inspired pork souvlaki skewers are made with tender pieces of pork fillet marinated in olive oil, garlic, oregano and spices. The skewers are then barbecued over hot embers and served on warm and fluffy yoghurt flatbreads with a good dollop of homemade tzatziki sauce. This is a great barbecue dish that you can prepare in advance, cook in no time and serve with your choice of salads and potatoes.

Ingredients
  • 4 whole pork fillets, cut into 1cm thick pieces
  • 4 sprigs of oregano, picked and finely chopped
  • 2 garlic cloves, roughly chopped
  • Olive oil
  • 2 tsp ground cumin
  • 2 tsp hot smoked paprika
  • 1 lemon zest and juice
  • Salt and black pepper to taste
  • For the tzatziki sauce:
  • 1 cucumber peeled, seeds removed and grated
  • 1 garlic clove, crushed into a paste
  • 1 tsp ground cumin
  • 1 small bunch of fresh mint, finely chopped
  • Extra virgin olive oil
  • Salt and black pepper to taste
Method
  1. Start by marinating the pork fillet in a large bowl with the chopped oregano, garlic, olive oil, cumin, smoked paprika, zest and juice of one lemon, salt and black pepper. Cover with cling film and keep in refrigerator for at least 6 hours but preferably overnight.
  2. The next day, arrange the marinated pork into metal skewers, cover with cling film and keep in the refrigerator. Take the skewers out of the fridge at least 1 hour before cooking.
  3. For the tzatziki sauce, combine all the ingredients in a bowl, cover with cling film and keep in the refrigerator until ready to serve.

  5. Pre-heat your wood-fired oven to 200°C. Once the fire reduces to hot embers, spread them closer to the oven door and pile them together around the centre area and sit a cast iron or stainless-steel rack ready to barbecue your skewers.
  6. Barbecue the pork skewers until golden brown and cooked through, turning the skewers every 2 minutes on each side, they take about 6-8 minutes. Transfer the skewers to a warm platter and serve with warm yoghurt flatbreads and tzatziki sauce.
