Cedar Plank Salmon with Cajun Rub

This is such an easy way to cook whole fish in a wood-fired oven. The salmon takes on the light woodiness from the cedar plank and the smoke blends perfectly with the rich oily fish. Cook it on low embers at 180°C until pink and serve it with a salad of chargrilled baby gem lettuce and Caesar dressing.

Ingredients
  • 1Kg Scottish salmon fillet with skin on
  • 1 teaspoon chopped thyme
  • 1 tablespoon of cajun spice
  • 1 tablespoon grated lemon zest
  • Salt and pepper to taste
Method
  1. Soak the cedar plank in water for 3 hours, keeping it immersed.
  2. Prepare your wood-fired oven until you have low embers at 180°C.
  3. Stir together the cajun spice, thyme, lemon zest, and 1/2 teaspoon of salt and pepper. Spread mixture on the flesh side of the salmon and let the salmon stand at room temperature 15 minutes.
  4. Place the salmon on the cedar plank, skin side down and roast at 180°C until the salmon is just cooked through and the edges are browned, it takes about 12 to 15 minutes.
  5. Let the salmon stand on the plank for 5 minutes before serving.
