How to cook pizza with Veloz gas pizza oven.

Cooking Pizza in your Veloz.

Want to know how to cook pizza in a gas pizza oven, in particular, in a Fuego Veloz? Well, it’s much easier and quicker than you think.

Pre-heat your Veloz gas pizza oven.

To make pizza in a gas oven, first you need to set up and fire up your Veloz, then leave it to pre heat for just 10 minutes. This will bring the Veloz up to the maximum temperature of 400°C creating delicious authentic pizza in a gas oven.

Prepare the dough.

Whilst your Veloz is heating up, you need to prepare your dough. You can either make your own dough or enjoy the convenience of our ready-made Frozen Sourdough Pizza Dough Balls which come in packs of 16 balls that each make a 12-inch pizza. Just remember to take them out of the freezer to defrost well in advance of cooking.

Flour your preparation surface with Semolina Flour and then roll out your dough by flattening the gdough ball and pressing it out from the centre with your fingertips. Stretch it out a little then gently throw it backwards and forwards from palm to palm so it stretches out into a larger 12-inch circle of dough.

Add sauce.

Next, place it back on your surface and get a large spoon of your tomato sauce and spread it around the pizza base with the back of the spoon. Our San Marzano Plum Tomatoes are perfect for making an authentic Neopolitan pizza sauce.

Cheese and toppings.

Once you have applied the sauce, it’s time to add some cheese and then toppings.

When it comes to how to cook pizza in a gas pizza oven, Mozzarella is an obvious choice of cheese. It has that delicious taste and wonderful, fun trademark stringing. But don’t let that limit your imagination. Have fun experimenting with different cheeses such as a good authentic aged Manchego or even a Truffled Sheep’s Milk Cheese.

To finish, you can top it off with your favourite ham, sausage or olives. Some of my favourites include top quality sliced Chorizo, artisan Sopbrasada sausage, acorn-fed Jamón Ibérico de Bellota, free range Serrana Ham, and spicy Calabrian Nduja sausage, maybe with a few Manzanilla Olives. You may also wish to add a few fresh basil leaves and a light sprinkling of aromatic Calabrian Oregano.

Once your Veloz is up to maximum temperature, it’s time for the main event.

Cooking your pizza.

Just before putting your pizza in a gas oven, it’s important that you turn it down to the “Low” setting on the temperature control. Don’t worry, the pizza stone will be really hot and also we don’t want to burn the crust.

Gently slide a pizza peel or a turning pizza peel under your pizza and carefully slide it into your Veloz – jiggle it backwards and forward to loosen the pizza from the peel so it is positioned in the centre of the pizza stone.

Even with the temperature turned down to low, the Veloz cooks pizza in just 1 to 2 minutes. So don’t wander off. Halfwaye through cooking, you may wish to slide your pizza peel halfway under the pizza and then rotate it 180 degrees to ensure the crust cooks evenly.

When the crust has risen and cooked, take the pizza out with your pizza peel and cut it with a pizza wheel.
