This large 30cm round ‘cazuela’ plate is an ideal addition to the cooking arsenal of anyone with a Fuego wood fired pizza oven. It can be used to create mouth-watering meals from seared meats, fish or vegetables with that distinctive smoky chargrilled taste or simply used as a rustic plate.
Moulded entirely by hand the same way since Roman times, artisan craftsmen and women create these rustic round plates using a red and white clay that when combined has extraordinary refractory qualities. The result is a fire clay that can withstand and retain intense heat which makes it the logical choice for cooking in a Fuego outdoor pizza oven. Also suitable for microwave, stovetop and traditional oven cooking.
Our terracotta cooking dishes are hand-made by experienced potters made with two types of clay; slow drying red clay which gives the pot its strength and white clay, containing quartz, feldspar and mica which give the pots their incredible refractory properties. The pots are dried, glazed and fired for 10 hours. The glaze on the cazuela dish is perfectly safe for all applications, it contains no lead.
On first use, terracotta cooking dishes need to be soaked for 30 minutes in cold water to prevent the pot from cracking when used. When cooking with terracotta, the key is to increase and decrease heat gradually to avoid cracking and shattering the dishes.
