The Holm Oak tree (Quercus Ilex) is a hard, dense and aromatic hard wood, highly regarded for its long burn characteristic and authentic use in wood-fired oven cooking.
It has a long burn profile and beautifully sweet aromatics of woodland, black pepper and cinnamon with an intense caramel undertone. This is the oak which grows the acorns, which feed the Ibérico pigs called ‘pata negra’ that go on to make beautiful Jamón Ibérico.
The best sign that a charcoal is good is when you feel like using it again. This happens when you make your holm oak charcoal in the traditional way with only holm oak wood from controlled felling and thinning of Spanish forests and hills. The area where this charcoal is produced is home to the highest density of holm oak trees in the world.

The 70 can fit up to 1 x 12" pizzas in at one time, 1 x roast at one time, or 4 x loafs of bread at one time.
The 80 can fit up to 2 x 12" pizzas in at one time, 2 x roasts at one time, or 6 x loafs of bread at one time.
The 90 can fit up to 3 x 12" pizzas in at one time, 3 x roasts at one time, or 8 x loafs of bread at one time.
The 100 can fit up to 4 x 12" pizzas in at one time, 5 x roasts at one time, or 10 x loafs of bread at one time.
The 120 can fit up to 6 x 12" pizzas in at one time, 8 x roasts at one time, or 16 x loafs of bread at one time.
