This 35cm diameter shallow roasting dish, or cazuela, is hand-made in the Castile region of Spain from two special types of clay peculiar to the region. This is the right dish to cook a wood-fired paella, roast some meatballs or make a delicious lasagne.
Hand-shaped by artisan craftsmen and women the same way for thousands of years, each one has its own unique character. The fire clay used to make it is a combination of strong, slow-drying red clay with white heat-retaining clay containing quartz, feldspar, and mica. The result is a rustic looking dish that is perfect for roasting or baking most types of food. One that is capable of withstanding the extreme heat of not only a Fuego wood fired pizza oven, but also a microwave, stovetop or traditional oven.
Our terracotta cooking dishes are hand-made by experienced potters made with two types of clay; slow drying red clay which gives the pot its strength and white clay, containing quartz, feldspar and mica which give the pots their incredible refractory properties. The pots are dried, glazed and fired for 10 hours. The glaze on the cazuela dish is perfectly safe for all applications, it contains no lead.
On first use, terracotta cooking dishes need to be soaked for 30 minutes in cold water to prevent the pot from cracking when used. When cooking with terracotta, the key is to increase and decrease heat gradually to avoid cracking and shattering the dishes.

The 70 can fit up to 1 x 12" pizzas in at one time, 1 x roast at one time, or 4 x loafs of bread at one time.
The 80 can fit up to 2 x 12" pizzas in at one time, 2 x roasts at one time, or 6 x loafs of bread at one time.
The 90 can fit up to 3 x 12" pizzas in at one time, 3 x roasts at one time, or 8 x loafs of bread at one time.
The 100 can fit up to 4 x 12" pizzas in at one time, 5 x roasts at one time, or 10 x loafs of bread at one time.
The 120 can fit up to 6 x 12" pizzas in at one time, 8 x roasts at one time, or 16 x loafs of bread at one time.
The 140 can fit up to 9 x 12" pizzas in at one time, 10 x roasts at one time, or 24 x loafs of bread at one time.
